Tis the season to be baking… Fa la la la la… la la la la.
I’ve got my pretty apron on and I’m all set to start my Christmas baking.
I love to bake all year round, but really enjoy making delicious offerings during the Christmas season.

As a family, we have our traditional favourites that signal the start of the season… fruit cake, White Christmas and a rather large assortment of truffles. Yep, we seem to like all those calorie loaded sweet treats!!
Then I make food gifts for family, friends and neighbours… shortbread, mince pies and loads of cookies.

Plus now that we live here at the Resort, I also bake Christmas welcome packages for our guests for when they check in. It’s a small gesture, but one that is greatly appreciated after a long car trip. Baking for large numbers means we can make quite a few different things and then package up a couple of each in cello bags.
So, the baking season has started and this week I’m joining with a group of friends to bring you the 2014 Christmas Cookie Exchange, where we’ll be sharing our favourite cookie recipes. Then on Friday 28th, you get to share yours at our big link party.
I have a new recipe to share with you tomorrow, but today I thought I’d share with you some of our favourite Christmas cookie recipes from previous years.
This one, Lemon, Cranberry and Pistachio wreath cookies were a variation on a Martha Stewart recipe found HERE.
It was made more festive looking by adding a 170 gram packet of dried cranberries (finely chopped ) with the pistachios on the iced wreath.
This is my friend Jane’s delicious Chocolate Chip Oreo Cookie recipe…
Jane’s Chocolate Chip Oreo Cookies
- 1 stick softened butter (125 grams)
- 6 Tablespoons sugar
- 6 Tablespoons brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 ¼ cup flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 11 broken pieces Oreo Cookies
- 1 cup chocolate chips
1. Preheat oven to 350 degrees F. Cream butter and sugars until well combined. Add egg and vanilla until mixed well.
2. Place flour, baking soda and salt into a large bowl, stir to combine. Slowly add dry ingredients to wet ingredients then stir in Oreos and chocolate chips until just combined.
3. Using a medium cookie scoop, scoop onto baking sheet. Bake for 10 minutes or until cooked, but still soft. Let cool on baking sheet for 3 minutes before transferring to cooling rack.
And I ask you. . . who doesn’t love a chocolate chip cookie!
So from 6 am (Eastern Time) our 2014 Christmas Cookie Exchange will begin.
