If you detect a note of merriment in my tone today it’s not the remnants of the Easter sugar high, but in fact the pure pleasure of having the house to myself for the first time in nearly 3 weeks.
I’m thrilled that my girls like to have their friends here and I love the frivolity and playfulness that a house full of teenagers brings with it during school holidays. What I don’t enjoy is the constant mess in the kitchen, the disappearing pantry and grotty floorboards. Soooo, today I have reclaimed my house, filled the pantry and my floors are now so clean we could eat off them. I’m one happy mum!!
Faced with the challenge of school lunches today I resorted to an old favourite. . .
I think most mums who bake have a ‘favourites’ file. You know those never fail quick and easy recipes that are always crowd pleasers. This one is not our ‘most’ favourite, but given the quantity of chocolate already consumed in this house this week, I figured we’d best have something other than chocolate.
Preparation Time – 20 minutes
Cooking Time – 15 minutes
- 125g butter, softened
- 1/2 cup (100g) caster sugar
- 1 egg
- 1 cup (150g) self-raising flour
- 1/4 cup (35g) custard powder
- 1/4 cup (90g) raspberry, strawberry or apricot jam
- Preheat oven to 180°C. Line two oven trays with baking paper. Use an electric mixer to beat the butter and sugar in a medium bowl until pale and creamy. Add the egg and beat until just combined. Add the flour and custard powder and stir with a wooden spoon until just combined.
2. Use lightly floured hands to roll 1 1/2 teaspoons of mixture into small balls. Place on the lined trays, allowing room for spreading. Use a lightly floured finger or the end of a wooden spoon to make an indentation in the centre of each ball. Spoon 1/2 teaspoon of jam into the centre of each biscuit.
3. Bake in preheated oven, swapping trays halfway through cooking, for 15 minutes or until lightly golden and cooked through. Remove from oven and set aside on trays to cool completely.
Mmmmmmm. . . yummo!! I hope these last until tomorrow.

I’ve had a whole two weeks of solitude at my house, hubby and son are due back tomorrow. I have enjoyed every single minute! I think some time to ourselves is good therapy for our souls!! I haven’t chieved as much as I had planned but that doesn’t matter.
PS Jam drops are one of my favs too.

Question. What is Custard Powder? Where do you find and get it? I have never heard of it. I live in Rochester, NY. I would really like to make these for Christmas as one of the kinds of cookies I make. Any help would be great.
Custard Powder is an Australian and UK ingredient, which you probably won’t see much in the US. I believe your closest equivalent is the mix you use for instant pudding. Hope this helps 🙂
