My hubby and I both love to cook, so menu planning and food prep is fun for us and something we enjoy doing together.
For the most part we eat a healthy and unprocessed diet, but every now and then we feel the need to whip up something a little more decadent.
Sooo… over the Easter break while everyone else was indulging in chocolate, we donned our aprons and created a different kind of sweet treat….
Homemade Hot Raspberry Jam Donuts.
These hot fluffy spheres, piped with homemade raspberry jam and rolled in sugar were amazingly delicious!!
You may remember that last week I shared a recipe for making homemade raspberry jam using just 3 ingredients. We used that jam in these decadent donuts.
I used this donut recipe from The Sweet & Simple Kitchen, however, I made mine using my Thermomix.
Kristie provides detailed instructions for making the donuts the more conventional way in her post here, but for anyone who has a Thermomix, I’ll share how I made mine.
How to make Hot Raspberry Jam Donuts in a Thermomix
See ingredients list HERE.
Heat the milk 1 minute / 37°/ speed 1.
Add one tablespoon of the sugar and the yeast to the Thermomix bowl and allow to stand for 5-10 minutes or until frothy.
Next add in your egg yolks, remaining sugar and mix 6 seconds/speed 6 to combine. Continue mixing on speed 4, while adding in your room temperature butter in chunks to allow it to get evenly distributed in the mixture.
Next add in 1 cup of the flour, the cinnamon and salt, and continue on speed 4 / approx 6 seconds until all of the flour is combined.
Gradually add in the remaining 2 1/4 cups of flour, allowing the flour to incorporate after each addition.
Once all of your flour is incorporated, set the Thermomix to knead/ 3 minutes.
Transfer dough onto a ThermoMat or lightly floured bench top and knead the dough with your hands for another few minutes, and shape it into a ball.
From this point, continue following Kristie’s recipe instructions.
I used a 2 inch scone cutter to make 15 donuts, with a little extra dough left over to test the hot oil with. Keep in mind that the donuts practically double in size.
Tip: once your donuts puff up, be very gentle while handling and transferring to pot to cook.
We shared these sweet, sugary delights with friends for afternoon tea on Easter Sunday and everyone loved them!
I think the homemade jam made them even more special!
We hope you enjoy making jam filled donuts as much as we did.
Happy baking my friends,
♥
